TIP OF THE WEEK

To ensure that your pasta absorbs the flavour of the sauce, toss the cooked pasta immediately after draining the water. Cooked pasta absorbs flavour best when hot. 

Multicolour Sandwiches

Ingredients

  • 2 cups cabbage shredded finely
  • 2 carrots cut in thin strips
  • 1/2 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1 tbsp butter
  • Salt to taste
  • 1/2 tsp pepper powder
  • 6 slices sandwich bread, buttered

Method

  • Heat 1/2 the butter in a skillet.
  • Add the cabbage and stir fry till tender.
  • Add salt, pepper, garlic, ginger and stir and remove.
  • Heat remaining butter in a skillet.
  • Add carrot and stir fry till tender.
  • Add salt, pepper, garlic, ginger and stir and remove.
  • Allow cabbage and carrot to cool.
  • Place a spoonful of the cabbage on a slice of bread. Then place the other slice on top of it. Repeat carrot filling on second slice of bread and place the third slice on top of it. Grill in a pre-heated oven/sandwich toaster.
  • Remove when golden brown and sprinkle with fine grated cheese while still hot.
  • Serve with tomato ketchup
